The Best Gluten Free Chocolate Chip Cookies

So these are not actually healthy...but they are allergy friendly and when you have kids with allergies a good cookie recipe is a must!  Use your favorite gluten free flour blend and make adjustments for the milk & eggs and they will be vegan as well.  Enjoy!

Ingredients


¾ cup coconut oil

1 ¼ cup coconut sugar

2 tablespoons milk (almond, rice or coconut)

1 tablespoon vanilla

1 egg (or ¼ cup applesauce)
 
1 3/4 cup gluten-free flour (we prefer Bob's Red Mill)

1 teaspoon salt

¾ teaspoon baking soda

1 cup non-dairy chocolate chips

Directions

 
Preheat oven to 375 degrees.

Combine oil, sugar & vanilla. Beat on medium speed and add egg & milk.

Combine dry ingredients. Add to wet mixture. Stir in chocolate chips.

Drop rounded spoonfuls on baking sheet lined with parchment paper.

Bake one sheet at a time for 8-10 minutes.
