Ingredients
2 teaspoons olive
oil
2 boneless skinless
chicken breasts, cut in small pieces
13 oz. turkey polish
sausage, sliced
1 medium onion,
Diced
1 green pepper,
diced
½ cup diced celery
3 medium carrots,
cut in medallions
1 medium zucchini,
diced
2 large garlic
cloves, pressed
¼ teaspoon cayenne
pepper
½ teaspoon cajun
seasoning
3 bay leaves
sea salt & black
pepper to taste
2 cups brown rice
4 cups chicken broth
1 - 14 oz. can diced
tomatoes
Directions
Heat oil in a large
pot over medium heat. Saute chicken & sausage until lightly
browned. Stir in onion, pepper, celery, carrots & garlic. Add
cayenne pepper, cajun seasoning & bay leaves. Cook until onion is
tender, about five minutes. Add rice & chicken broth. Bring to
boil. Reduce heat & add zucchini and tomatoes. Cover &
simmer 20-30 minutes until rice is tender and almost all liquid is
absorbed.
