Roasted Red Potatoes


Ingredients


1 ½ lbs. red potatoes, diced in ½ inch pieces

2 tablespoons extra virgin olive oil

2 garlic cloves, minced

½ teaspoon dried rosemary

½ teaspoon dried thyme

½ teaspoon sea salt

¼ teaspoon black pepper

Directions


Combine all ingredients in a plastic bag & toss until well coated. Transfer to baking sheet. Bake uncovered for 35-45 minutes at 450 degrees.
